The concept of Fat Belly’s Pub was in its incubation phase for almost 15 years. Owner and Executive chef, Scott Parker, was fortunate to study overseas during his college years. During his free time, Chef Parker would “day dream” about an Irish Pub he would eventually own. Chef Parker even went as far as to create schedules for his staff.
Although Chef Parker’s culinary training and experience has been strictly fine dining, his favorite pass time was relaxing and eating at pubs. So fast-forward to the year 2005, Chef Parker now an instructor at Johnson & Wales University had the opportunity to fulfill his dream. A nice local spot was available, perfect size for an Irish pub.
Now Fat Belly’s Pub provides customers with high quality pub-style food and numerous selections of beer and wine.
